Canning, the process of placing foods in jars or cans and heating properly to a specified temperature, is a way to preserve many different foods while also preserving the nutritional properties that are otherwise destroyed from high heat.
We believe that the trade-off of using higher temperatures in factory methods that destroy essential microorganisms and inactivates vital enzymes for the sake of maintaining safety of the food is avoidable. In our efforts to both preserve the food safety & quality of nutrients, over the years we have used many different canning techniques as well as freezing and drying techniques.
