Borage is a 1-3 ft. tall annual herb with large, bristly, gray-green leaves and beautiful, powder-blue flowers. Cucumber-flavored fresh leaves can be added to salads, cooked, or made into a cooling drink. With its blue, star-shaped flowers, borage is very ornamental and a favorite of honeybees. Long harvest period. The flowers can be candied while the seeds are a rich source of gamma-linolenic acid (GLA).
